Warm Nuts with Rosemary

Ingredients
250 grams unsalted mixed nuts
1 sprig rosemary
The egg whites of 2 eggs or 60 grams pasteurized egg white
Salt and pepper to taste
Instructions
Preheat the oven to 170°C.
Roast the nuts on a baking tray for about 10 minutes, until golden brown.
Remove the rosemary leaves from the sprig and chop them very finely.
Lightly whisk the egg whites, but do not beat them until stiff.
Let the roasted nuts cool slightly, then place them in a mixing bowl.
Add the egg whites and rosemary to the nuts and mix well.
Spread the nuts evenly on a baking tray lined with parchment paper.
Season with salt and pepper to taste and bake for another 5 minutes.
When the nuts are crisp, they are ready to serve.
Storage advice: Store in an airtight container for up to 5 days.
