Sweet Potato Mash with Feta and Spring Onion

Ingredients
1.4kg sweet potatoes
15g salt and pepper
90g unsalted butter
250g spring onions
100g sun-dried tomatoes
180g feta cheese
90g walnuts
Instructions
Peel the sweet potatoes and cut them into large pieces.
Place the sweet potato pieces in a pot and cook for about 10 minutes, until tender.
Drain the potatoes and let them steam dry for a few minutes.
Mash the potatoes coarsely with a potato masher.
Season with salt, pepper, and butter.
Slice the spring onions into thin rings.
Halve the sun-dried tomatoes.
Stir the spring onions and tomatoes through the mashed potatoes.
Spoon the mash onto plates and crumble the feta cheese over the top.
Finish with the walnuts as garnish.
Tip: You can also use feta cubes instead of crumbled feta.
Storage Advice: Store in an airtight container in the refrigerator for up to 3 days.
