Spinach Waffles with Avocado

Ingredients

  • 100 ml semi-skimmed milk

  • 1 teaspoon baking powder

  • 150 grams flour

  • 2 eggs

  • A pinch of salt and pepper

  • 1 teaspoon sugar

  • 150 grams fresh spinach

  • 50 grams unsalted butter

  • 1 avocado

Instructions

  1. Blend the milk and eggs in a blender.

  2. Add the flour, baking powder, sugar, salt, pepper, and spinach, then blend until you have a smooth batter.

  3. Preheat the waffle iron and grease it with a little butter to prevent sticking.

  4. Pour some batter into the waffle iron, close it, and bake the waffles for 3 to 4 minutes until cooked and golden.

  5. Repeat until all the batter is used.

  6. Place two waffles on each plate.

  7. Halve the avocado, remove the pit, and scoop out the flesh with a spoon.

  8. Slice the avocado and arrange the slices next to the waffles on the plates.

Storage advice

Keep in a sealed container in the refrigerator for up to 3 days.
