Spinach Waffles with Avocado

Ingredients
100 ml semi-skimmed milk
1 teaspoon baking powder
150 grams flour
2 eggs
A pinch of salt and pepper
1 teaspoon sugar
150 grams fresh spinach
50 grams unsalted butter
1 avocado
Instructions
Blend the milk and eggs in a blender.
Add the flour, baking powder, sugar, salt, pepper, and spinach, then blend until you have a smooth batter.
Preheat the waffle iron and grease it with a little butter to prevent sticking.
Pour some batter into the waffle iron, close it, and bake the waffles for 3 to 4 minutes until cooked and golden.
Repeat until all the batter is used.
Place two waffles on each plate.
Halve the avocado, remove the pit, and scoop out the flesh with a spoon.
Slice the avocado and arrange the slices next to the waffles on the plates.
Storage advice
Keep in a sealed container in the refrigerator for up to 3 days.
