Skyr with Apricot Compote and Granola

Ingredients
200 grams apricots
500 ml water
Juice of 1 lemon
1 star anise
500 grams skyr
100 grams granola of choice
Instructions
Bring the apricots to a boil with the water, lemon juice, and star anise.
Let it simmer gently with the lid on for 10 minutes.
Remove the star anise and turn off the heat.
Blend the mixture with a hand blender until you have a slightly chunky compote.
Allow the apricot compote to cool, then refrigerate.
Prepare 4 serving glasses. Add a layer of skyr, then a layer of compote, and repeat this step twice.
Top with granola.
Storage advice
Keep refrigerated for up to 2 days (without the granola, as it will soften).
