Skyr Swirl with Red Fruit

Ingredients
400g skyr (plain or vanilla)
250g frozen red fruit
50ml water
70g sugar
Juice of half a lemon
2 tsp cornstarch
Instructions
Bring the water, sugar, lemon juice, and red fruit to a boil in a saucepan.
Let it simmer gently for 3 minutes, then add the cornstarch to thicken the fruit compote.
Pour the mixture into a shallow dish and let it cool in the refrigerator.
Pour a little of the red fruit compote into glasses, then add a layer of skyr.
Repeat this step three times, swirling gently with a spoon to create a nice marbled effect.
