Skyr Swirl with Red Fruit

Ingredients

  • 400g skyr (plain or vanilla)

  • 250g frozen red fruit

  • 50ml water

  • 70g sugar

  • Juice of half a lemon

  • 2 tsp cornstarch

Instructions

  1. Bring the water, sugar, lemon juice, and red fruit to a boil in a saucepan.

  2. Let it simmer gently for 3 minutes, then add the cornstarch to thicken the fruit compote.

  3. Pour the mixture into a shallow dish and let it cool in the refrigerator.

  4. Pour a little of the red fruit compote into glasses, then add a layer of skyr.

  5. Repeat this step three times, swirling gently with a spoon to create a nice marbled effect.

Keep refrigerated for up to 2 days.
