Panna Cotta with Red Fruit

Ingredients

  • 170g unsweetened cream

  • 7g gelatin sheets

  • 2g vanilla pod

  • 55g sugar

  • 375g low-fat quark

  • 125g strawberries

  • 75g blueberries

  • 75g raspberries

Instructions

  1. Pour the cream into a saucepan and bring it almost to a boil.

  2. Soak the gelatin in cold water.

  3. Cut the vanilla pod lengthwise with a sharp knife.

  4. Scrape out the seeds and add them to the cream.

  5. Keep the cream just below boiling for about 5 minutes, then remove the vanilla pod.

  6. Add the sugar and stir until dissolved.

  7. Remove from heat.

  8. Squeeze out the gelatin and add it to the cream.

  9. Stir until the gelatin is completely dissolved, then add the quark.

  10. Once the mixture is smooth, pour it into small bowls or molds.

  11. Refrigerate for at least 3 hours until set.

  12. Wash the red fruit and remove the stems from the strawberries.

  13. Top the panna cotta with the fruit before serving.

Tip: Also delicious with mango, mandarin, or a crispy caramel cookie (“kletskop”).

Storage Advice: Keep refrigerated in a sealed container for up to 3 days.
