Oatmeal Muffin with Clotted Cream

1 apple
2 grams cinnamon
130 grams self-rising flour
65 grams cane sugar
10 grams glucose syrup
25 grams custard powder
15 grams vanilla sugar
2 grams baking powder
1 gram salt
1 egg
115 ml whole milk
80 ml sunflower oil
30 grams rolled oats
For the clotted cream
170 grams mascarpone
10 grams sugar
85 ml heavy cream
Instructions
Preheat the oven to 200°C (390°F).
Peel the apple and cut it into large cubes.
Sprinkle the cinnamon over the apple pieces and place them in the refrigerator for a while.
In a mixing bowl, combine the self-rising flour, cane sugar, glucose syrup, custard powder, vanilla sugar, baking powder, salt, and the egg.
Mix slowly, then gradually add the milk until it is fully incorporated.
Slowly add the oil while mixing until smooth.
Fold in the apple cubes and half of the oats.
Spoon the batter into muffin cups.
Sprinkle the remaining oats on top of the muffins.
Bake at 200°C for about 14–16 minutes, until golden brown.
Clotted cream
Place the mascarpone and sugar in a bowl and mix until smooth.
Add the cream to the mascarpone mixture and mix on low speed until well combined.
Refrigerate the clotted cream until the muffins are ready to serve.
