Ingredients
100 grams unsalted butter
70 grams light brown sugar
120 grams flour
70 grams rolled oats
1 lemon
1 teaspoon vanilla extract
Topping of your choice, such as pecans, sliced almonds, caramel pieces, or chocolate
Also needed: plastic wrap, baking tray, parchment paper
Instructions
Take the butter out of the refrigerator one hour before baking.
Grate the lemon zest.
Mix the butter and sugar, and whisk for about 5 minutes until creamy.
Add the vanilla extract, then the lemon zest.
Fold in the flour and oats, and knead into a firm dough.
Place a 30-centimeter sheet of plastic wrap on your work surface and cover it with another sheet.
Shape the dough into a roll about 5 centimeters thick, place it on the wrap, and roll it up tightly.
Chill the dough in the refrigerator for at least 1 hour.
Preheat the oven to 190°C.
Remove the plastic wrap and cut the dough into slices about half a centimeter thick.
Place the cookies on a baking tray lined with parchment paper.
Decorate the cookies with nuts, chocolate, and/or sliced almonds. If you want to add caramel pieces, do so right after baking.
Bake the cookies for 15 minutes in the preheated oven until golden brown.
Storage advice: Keep in an airtight container for up to 1 week.
