Mashed Potatoes with Meatballs and Gravy

Ingredients
80g butter
4 meatballs (about 120g each)
50g flour
500ml water
800g starchy potatoes
5g salt
800g pumpkin
1 apple
75ml whole milk
50g butter
Instructions
Melt the butter in a large pan and brown the meatballs evenly on all sides. Cook until done.
Remove the meatballs from the pan and set aside.
Add the flour to the remaining fat in the pan and stir well with a whisk.
Let the roux cook until it reaches a sandy texture.
Gradually add the water, stirring continuously, until a smooth gravy forms at the desired thickness.
Return the meatballs to the gravy and let them warm through gently.
Peel the potatoes and cut them into chunks.
Place the potatoes in a pot with salted water and bring to a boil.
Peel and dice the pumpkin.
When the potatoes are halfway cooked, add the pumpkin cubes and cook until both are tender.
Drain and allow them to steam dry for a few minutes.
Peel and dice the apple into small pieces.
Mash the potatoes and pumpkin with the milk and butter until smooth.
Finally, fold in the apple pieces.
Serve the mash with the meatball and gravy on top.
Storage Advice: Keep refrigerated in an airtight container for up to 3 days.
