Mashed potatoes with carrot and onion, served with fish sticks or sea sticks

Ingredients

  • 300 grams potatoes

  • 300 grams winter carrot

  • 2 onions

  • 80 ml semi-skimmed milk

  • 65 grams unsalted butter or plant-based butter

  • 12 fish sticks or vegetarian sea sticks

  • 8 tablespoons olive oil

  • Half a shallot, diced

  • 200 ml cooking cream (20%)

  • 100 ml water

  • 4 sprigs fresh chervil

  • Pepper and salt to taste

Instructions

  1. Peel the potatoes and cut the carrots and onions into slices about 2 cm thick.

  2. Place the potatoes, carrot, and onion in a suitable pan. Add water until it reaches about 2 cm above the vegetables.

  3. Cover the pan and cook over low heat for about 20 minutes, until the vegetables are soft.

  4. Drain the vegetables and mash them with the milk and 25 grams of butter.

  5. Season with pepper and salt to taste.

  6. Sauté the shallot in a pan. Add the cooking cream and water and let it reduce. Blend the mixture with a hand blender to make a smooth sauce.

  7. Mix in the remaining butter and season with pepper and salt.

  8. Cook the fish sticks or sea sticks in olive oil as shown on the package.

  9. Serve the mash on a plate, place the fish or sea sticks on top, and pour the sauce around it.

  10. Garnish with fresh chervil leaves.

Storage advice
Keep in the refrigerator for up to 2 days.
