Frozen Yogurt with Blueberries

Ingredients
30 ml water
60 g granulated sugar
90 g blueberries
360 g Greek yogurt
60 g shredded coconut or desiccated coconut
25 g honey
Instructions
Line a loaf tin with parchment paper.
Heat the water and sugar in a small pan until it becomes a syrup. Pour the syrup over the blueberries and let it cool.
Stir the yogurt until smooth and mix in the blueberries with syrup and honey.
Pour the mixture into the prepared loaf tin and sprinkle the coconut evenly over the top.
Cover the tin and place it in the freezer for at least 6 hours.
Once frozen, remove from the freezer and cut into blocks.
Tip: Wrap the frozen yogurt blocks in parchment paper and store them in an airtight container in the freezer.
Tip: You can omit the honey — if you do, add 10 g extra sugar instead.
Storage Advice
Store in an airtight container in the freezer for up to 3 months.
