Fluffy Pancakes with Apple and Pear Compote

Ingredients
200 grams self-rising flour
2 eggs
175 ml (plant-based) whole milk
A pinch of salt
Butter or margarine for frying
3 apples
2 pears
1 cinnamon stick
1 star anise
30 grams sugar
1 tablespoon vinegar
Instructions
Put the flour and a pinch of salt in a bowl. Make a well in the center and add the eggs and milk. Whisk together until smooth. Let the batter rest for 15 minutes.
Peel the apples and pears, remove the cores, and cut them into small pieces.
Place the apple and pear pieces in a small saucepan with the cinnamon stick, star anise, sugar, vinegar, and 4 tablespoons of water.
Cover the pan and let it simmer gently for 10 minutes.
Heat a frying pan with a bit of butter or margarine. Spoon small rounds of batter (about 10 cm in diameter) into the pan. Depending on the size of the pan, you can cook 2 or 3 pancakes at a time. Cook until golden brown on both sides.
Remove the lid from the compote and mash it gently with a fork. Let any excess liquid evaporate.
Serve the pancakes with the compote and, if desired, a sprinkle of powdered sugar.

Store in a sealed container for up to 2 days.
