Chicken Skewers with Satay Sauce

Ingredients

  • 500g chicken thighs

For the marinade:

  • 1 clove garlic, crushed

  • 1 tsp sambal oelek

  • 3 tbsp ginger syrup

  • 1 tbsp natural vinegar

  • 1 tsp tomato ketchup

  • 1 tbsp ketjap manis (sweet soy sauce)

For the satay sauce:

  • 35g peanut butter

  • ½ tsp sambal oelek

  • 90ml water

  • 2 tbsp sunflower oil

Instructions

  1. Mix all the ingredients for the marinade together.

  2. Cut the chicken thighs into even pieces and stir them through the marinade.

  3. Cover and marinate for 1 hour in the refrigerator.

  4. Thread the marinated chicken pieces onto skewers or wooden sticks.

  5. Heat the sunflower oil in a frying pan and cook the skewers until golden and fully cooked.

  6. For the satay sauce, combine all ingredients in a small saucepan and heat slowly while stirring until smooth and warm.

Tip: Soak wooden skewers in water before using to prevent them from burning during cooking.

Serving suggestion: Delicious with cooked rice and cucumber salad.

Storage Advice: Keep in the refrigerator for up to 3 days in an airtight container.
