Beef Stew with “Hete Bliksem” (Mashed Potatoes with Apple and Onion)

Ingredients
For the Beef Stew:
40g butter
440g diced beef (stew meat)
2 white onions
5g salt and pepper
40g flour
60ml white vinegar
120ml water
15g apple syrup (appelstroop)
1 bay leaf
1 clove
1 beef bouillon cube
For the “Hete Bliksem”:
850g starchy potatoes
1 white onion
2 apples
1g cinnamon
20g sugar
60g butter
100ml water
5g salt and pepper
For the Fried Apple Garnish:
2 apples
50g butter
Instructions
Melt the butter in a (braising) pan.
Add the meat and brown it on all sides.
Cut the onions into large pieces and add them to the meat.
Season the meat with salt and pepper, then add the flour and stir well.
Deglaze with the vinegar, water, and apple syrup.
Stick the clove into the bay leaf and add it to the pan.
Add the bouillon cube as well.
Let the stew simmer gently for about 3 hours.
Remove the lid for the last 30 minutes to allow the sauce to thicken slightly.
If the stew thickens too much, add a little extra water.
Peel the potatoes and cut them into large pieces; cut the onion into chunks.
Put the potatoes and onion together in a pot and cook until tender.
Peel the apple and cut it into large pieces.
Cook the apple with the cinnamon and sugar until soft.
Once the potatoes are cooked, drain them and let them steam dry for a few minutes.
Mash the potatoes with the butter and then add the cooked apple.
Mix well and season with salt and pepper.
Peel another apple and remove the core.
Slice the apple into rings.
Heat a pan and fry the apple rings in the butter until golden brown.
Serve the stew with the mashed potatoes and fried apples.
